I found such a good recipe and I cooked it last night, it was so good I just have to share...
You will need:
10fl oz milk
3 tblsp dbl cream
knob of butter
olive oil
piece of smoked haddock
brown rice
fresh coriander
coriander seeds
cumin seeds
garam masala
bay leaf
cayenne pepper
3 eggs
red onion
Mango chutney
Put the rice on. When you've done that heat up a large pan, either a saucepan or a really big frying pan.
Toast your coriander & cumin seeds for a couple of minutes in this pan, then take them out and crush them up in a pestle & mortar, if you have one. (Otherwise a teacup and spoon seems to do the trick.)
In the same pan put some olive oil and fry your onion quite slowly.
While doing this, get a saucepan, lay the fish in the bottom skin side down and pour on your milk, a knob of butter and bay leaf.
Heat it up until it simmers then let it cook for about 10 minutes.
Poke the fish and if it falls apart easily it's done. Keep it basted in milk while it cooks.
Turn the heat off when it's cooked.
When the onions are about 3/4 done put in the other spices.
When the rice is done mix it into the onions.
Once the fish is done carefully take off the skin and pick out any bones, then break it up and put the chunks in with the rest.
Add your chopped fresh coriander to the mix
Add the double cream and another knob of butter to the mix, have the heat slow and simmer it all for as long as you want (5 - 20 minutes it doesn't seem to hurt)
Get a small saucepan and boil your eggs for 5 1/2 minutes.
Take them out the pan and run under cold tap.
Serve up your yummy meal, peel your eggs and lay them on top all artistic. They should be a bit runny in the middle still.
Eat with mango chutney and side salad.
YUM! Hope you enjoy it. That was for 2 people so have however much rice & fish you want.
